Eggs & Tomato Sauce

Ingredients

  • 1 chopped onion &1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1 tsp sweet smoked paprika
  • Salt and pepper
  • 1/2 cup chopped red peppers
  • 1 tbsp balsamic vinegar
  • 1 tsp coconut sugar
  • 2 big roasted tomatoes, chopped
  • 7 eggs
  • Olive oil

Directions

• Add some  olive oil to saucepan , add the onions and  garlic powder, cumin, paprika, salt and pepper.

• Cook stirring for a few minutes

• Add the chopped peppers, vinegar, and coconut sugar

• Cook for a few  minutes and add the tomatoes

• Add the eggs, season with salt and pepper, and put the lid on.

• Cook until the eggs are cooked
