Add the potatoes in saucepan, cover with water and add salt. Bring the pot to a boil, cook for 25 minutes . Drain the potatoes , rinse with cold water, and allow to cool. Cut the potatoes into cube, transfer to a large bowl.
To make the dressing, add olive oil, lemon juice, salt and pepper
To assemble, pour the dressing over the potatoes, add the mint and green onions
