Lebanese Potato Salad



  • 4 medium russet potatoes
  • 3 tsp extra-virgin olive oil
  • 2 tsp lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/4 cup finely chopped fresh mint
  • 4 chopped  green onions

Directions :

  • Add the potatoes in saucepan, cover with water and add salt. Bring the pot to a boil, cook for 25 minutes . Drain the potatoes , rinse with cold water, and allow to cool. Cut the potatoes into cube, transfer to a large bowl. 
  • To make the dressing, add olive oil, lemon juice, salt and pepper
  • To assemble, pour the dressing over the potatoes, add the mint and green onions
