Cauliflower Rice Salad



  • 1 large cauliflower
  • 1/4 cup extra-virgin olive oil
  • 1 cup  diced yellow onion
  • 1 cup chopped flat-leaf parsley
  • 1/2 cup chopped mint leaves
  • 3 tsp  lemon juice
  • 1/2 tsp sea salt
  • 1 cup chopped dried apricots
  • 1 cup chopped raw walnuts


  • Put the cauliflower  in a food processor  and pulse until it has the consistency of couscous
  • In a saucepan warm 1 tablespoon of the olive oil, add the onion, and sauté for about 5 minutes until soft. Add the cauliflower rice, and stir for about 2 minutes until warmed.
  • Transfer the onion and cauliflower mixture to a large salad bowl. Add the parsley, mint, lemon juice, olive oil, salt, apricots, and walnuts. Toss well to combine and adjust the salt
