Wild Rice and Carrots



  • 2 cups vegetable broth
  • 1 cup wild rice, rinsed and drained
  • 1 tsp extra-virgin olive oil
  • 2 large carrots, peeled & sliced
  • 2 diced celery
  • 1 bunch chopped parsley
  • 1/4 cup chopped fresh garlic
  • 1/2 tsp ground black pepper

     Directions :

  • In saucepan over high heat, combine the broth and rice. Cover and bring to a boil ,and cook for about 45 minutes. Turn off the heat, and leave the rice sitting with the lid secured for at least 10 minutes.
  • In a large skillet over medium heat, warm the olive oil. Add the carrots and celery, and cook while stirring continuously for 8 minutes, Add on the cooked rice, parsley, garlic, and black pepper, and stir for about 1 minute until the rice is warmed through
