Creamy Mushroom Pie



  • 500g potatoes
  • 3 garlic cloves
  • 250 g mushrooms
  • 250 ml soya cream
  • 1 can cannellini beans


  • Chop the potatoes into cubes and roughly slice the mushrooms
  • Preheat the oven to 200C and boil the potatoes in salted water for around 10 minutes or until soft
  • Meanwhile, heat a large frying pan with olive oil and add the finely diced garlic + chopped mushrooms and lightly fry for 5 minutes
  • Add soya cream + drained cannellini beans + pinch salt + pepper to the frying pan and continue to simmer for a further 4 minutes
  • Once the potatoes are soft, drain and add 1 tbsp of olive oil + pinch of salt + pepper and mash until smooth
  • Add the contents of the frying pan to a baking dish and top with the mash potato
  • Bake at 200C for 25 minutes until the top is slightly golden
